Portrait of the day: Philippe, Pastry Engineer

Hi Philippe, can you introduce yourself?

My name is Philippe, I’m 21 years old and I’m part-time time working for Acrelec as an Electrical engineer, and part-time student in an engineering school. It’s been 2 years now.

 

Can you describe your position?

With Antony, my tutor, we take care of creating the electrical documentation ( cable plans for the kiosk) and run some test benchmarks ( we create tools to be sure of the proper functioning of the cables).

 

How long have you been making cakes?

I’ve always been interested by pâtisserie but in the last 2 years, I started to learn about it seriously. I only do that for myself and friends.

 

How did you learn to make cakes?

With my mother. I started to help her when she was making cakes at home; and then I started to make them on my own.

 

What’s your cake signature?

The mango mousse. It’s a cake with a layer of Genoese, a mousse inside and fruits to decorate.

 

Does making cakes help you in your professional life?

Yes, it helps me to develop my creativity, I use this open-mindness in other fields such as studies for example.

 

Your favorite pastry Chef?

I would say I don’t have any in particular but I follow Christophe Michalak’s work on Instagram.

 

The most important things to make good pastries for you?

The method above all. It requires a lot of technique.
